JERRY DeMENNA, Ph.D.
a.k.a. Doctor DeMento

Esthetic Engineered Edibles or Chemically Correct Cooking

Born in a half-Italian / half-Jewish town, Jerry learned the essence of good cooking from his Neopolitan grandmother & his "adopted" Jewish aunt. He got his first chemistry set at age 5, graduated High School 2 years early and worked as a junior chef in New York City. While going to Rutgers NCAS to become a Pharmacist, he changed his major to Chemistry; getting his Ph.D. in Analytical Spectroscopy. He "analyzed" the foods he prepared to characterize them. Twenty-five years later, he designs foods & flavors for Frito-Lays and other mega-Companies. "Doctor DeMento", as he was christenend long ago, maintains one of the most extensive collection of hot peppers (chilis) from around the world. He works for a scientific instrument company, BUCK Scientific in CT, so he can afford to play. Jerry travels a lot to obtain new "samples" and is currently working on his fourth passport.

The ART of Cooking is actually the SCIENCE of Organic Synthesis using edible chemical reagents. We are all of us nothing more than a satisfactory arrangement of various CHEMICALS and should not fear this simple word. Culinary chemistry will divulge the basic "essences" of kitchen chemistry & its reaction mechanisms (neutralization, condensation, pyrolysis, esterification, volatilization, phase extraction, a.i.). It will enlighten attendees to the magic (and simplicity) of analytical instrumentation (spectroscopy & chromatography). Lastly, it will delve into the miasma of mesmerizing morsels magically materialized from the masterful mechanics mentioned herein (i.e. - the recipes: Lemons & Fish, Peppers & pH, Parts of a Pizza, Fat Facts, "True Colors" of M&Ms, Toxic Cookware, Garlic & You without P-U, the Why of Fries, etc).

Admission Policy

Please bring your membership card, which will be checked at the door, to all Greater New York Mensa sponsored events. If you do not have your card, your name will be checked against the current membership roster. Non-members and lapsed members are entitled to come to only three (3) events through December 31, 2001.

The Annual GNYM Business Meeting and Brainstorming Session (usually in June) is NOT open to the public. All GNYM members are encouraged to attend and there is no charge for admission that night.
